
Utahns Love For Potato Salad Could Be Dangerous
One of the best parts about holidays is the food that comes with it, but heat and food don’t always go well together.
Easter is the start of outdoor picnics, BBQs, and eating outside. As the weather starts to heat up people invite friends and family over with big meals prepared, just like they will this weekend.
One of the most popular Easter side dishes is potato salad.
As most people do, I think my mother’s is the best, and the family recipe is actually part of a cautionary tale. One I hope you’ll listen to as we start the season of outdoor eating.
Once upon a time, in the South there were a bunch of people going to a wedding. It was outside during the warmer months and people were having a grand time. One of the dishes brought for the wedding was potato salad and everyone had some.
The potato salad included the usual mayonnaise, eggs, potatoes, and onions and... was left out during the wedding. People still ate it.
Unfortunately, people died from food poisoning, and the wedding turned into a few funerals. At least from what I was told.
The moral of the story, though an obvious food safety point, is that you need to keep any mayonnaise foods cold. Most likely you won’t die from food poisoning in this day and age, but it will suck.
So, with that said, have a good time with the foods and celebration this Easter but remember to put away your salads in a timely manner.
